External microphone vs built-in mic on iPhone: does it actually improve a recording?

Short answer: sometimes, and for a narrower reason than the marketing around microphones usually suggests. An external mic can change how close to your mouth the input sits and how much of the room it picks up along with you. It does not change the file format, and it does not make a recognizer any better at understanding speech than a clean recording already would.

Getting a wired or USB microphone connected

An iPhone without a headphone jack needs an adapter to accept a standard wired microphone: a Lightning-to-3.5mm adapter for a Lightning-port iPhone, or a USB-C microphone or adapter for a USB-C one. Once connected, it becomes the system’s active input the same way a Bluetooth accessory does — there is no separate switch inside most recording apps to choose it, because the choice already happened at the system level before the app opened the microphone.

Confirming which input actually got used is a listening test, not a setting to check: record ten seconds with the external microphone connected, ten seconds with it disconnected, and play both back.
